When a raw ingredient is difficult to rely on, orders become smaller and more frequent as a safeguard against being left with overripe fruit. SoftripeTM removes that uncertainty. The technology we use to ripen our fruit controls the process through nine stages, with the room atmosphere regulated by algorithms. In other words, the process is as precise and data-driven as it can be.

Purchasing can be consolidated

A usable window of two weeks makes fewer, larger deliveries possible. That means better purchasing prices, less administration and fewer points at which something can go wrong in the chain. Forecasts become more accurate because the raw material behaves predictably and consistently.

The kitchen can plan ahead

An avocado that maintains the same quality on day two as on day nine can be placed on the menu without difficult variations. Predictable fruit quality means consistent dishes and the same cost per cover.

Manual sorting disappears

The assessment has already been made at delivery. Time previously spent checking the ripeness of each individual fruit can be used for more important tasks.

The effect on food waste is measurable and direct. Less is thrown away because less has time to spoil. But the greater gain lies in what the waste figure does not show. A kitchen that does not need to allow for ingredients that may have to be discarded gains more sustainable planning, more time and better control over its costs.
