Why ready-to-eat avocados last longer in the fridge

Softripe takes the fruit through nine controlled stages. Oxygen, carbon dioxide, ethylene, temperature and atmospheric composition are algorithmically controlled until the avocado or kiwi is evenly ripened. When the fruit leaves us, it has a ready-to-eat window that is ten to fourteen days longer than fruit ripened conventionally.

But from there, handling takes over. Refrigerated storage can extend its lifespan even further.

Ripening is chemistry. Chemistry is governed by temperature.

An avocado does not stop living when it is picked. It continues to respire and produce ethylene, the hormone that drives ripening. The process is enzymatic, and enzymes work more slowly as temperatures fall. As a rule of thumb, the rate roughly halves for every ten-degree drop in temperature.

A fruit kept at twenty degrees therefore ages significantly faster than the same fruit kept at six degrees.

Ready-to-eat fruit can handle the cold. Unripe fruit cannot.

Unripe avocados can be damaged by cold temperatures. If stored too cold before ripening is complete, the enzyme systems are disrupted, resulting in grey discolouration and uneven ripening. This is why avocados have traditionally been kept warm throughout the process.

Once the fruit is ready to eat, the situation is different. The ripening process is complete, and the cold has one job left: to slow things down. Once the avocado is ready to eat, the most critical stage of ripening has passed. Refrigeration can then slow further development and extend the period during which the fruit retains the right quality and level of ripeness.

Kiwi follows the same logic, with an even wider window. Ready-to-eat kiwi stored refrigerated can keep for several weeks.

What extra days are worth

For wholesalers, they mean more room to plan – the ability to allocate batches according to demand rather than the calendar. For commercial kitchens, they mean fewer deliveries and menu planning that does not depend on exact timing. For consumers, it is the simplest measure of all: the fridge instead of the fruit bowl.

In 2024, food waste in Sweden stood at 84 kilograms per person – the same level as in 2020 – despite an interim target to reduce it by 20 percent by 2025. The figure has not moved. Fruit is one of the product categories where the outcome is determined by how many days remain when the product reaches its destination.

What we know

Ten to fourteen extra days is what our Softripe ripening process provides. Refrigeration does not change what the fruit is when it arrives. But for those who want it, it provides even more days when the fruit is perfectly ready to eat.

The advice is simple and can be acted on today. Keep the fruit refrigerated, and you get even more days to enjoy it.
